I made pickles today. Have loved pickles all of my life. Lots of different types. But always thought it was difficult or too time consuming. Well, while in Wisconsin a few weeks ago, Steve’s mom served her AWESOME sweet refrigerator pickles, and they were swoon-worthy. She said they were SO easy. So I wrote down her recipe and tried it immediately upon returning home. They turned out GREAT. It gave me confidence.
So today in the current issue of Mother Earth News was a recipe for refrigerator pickled beans. I LOVE THEM! And I had just been to the market and got some beautiful beans. Yeah, yeah! I should grow my own. Some day I will, but we have limited gardening space at this rental house, and I can’t grow all I’d like. Luckily, there are a few great markets around here.
I realize these are only refrigerator pickles. I hope to graduate to processed or crock pickles one day. What I made today is: 3 jars of garlic-dill string beans; 1 jar of garlic-dill cuke spears; 1 jar of the base recipe for the sweet pickles I mentioned above, but I didn’t use as much sugar and I added dill, a lot of garlic, crushed red pepper, and black peppercorns.
Fun, fun! :) Anyone else out there make pickles? What kind do you make?
